- Fermentation
- From early September, strictly by hand into crates and only in the coolest hours of the day, to keep the bunches intact and at the right temperature.
- Vinification
- After gentle pressing, the grapes are vinified separately in steel tanks. Only 5% of the Chardonnay is aged in new barriques. The cuvée is assembled in January, and the second fermentation begins in May.
- Ageing on the lees
- Time on the lees starts at 48 months. A further period in bottle after disgorgement lasts about 12 months.

- Serve at 10°C. Keeps for 8-10 years.
- Storage
- Store in a cool, dark place. Longevity: 8-10 years.
- Tasting notes
- Golden yellow. Persistent perlage, velvety and fine on the palate. The nose shows ripe notes of candied fruit, pastry cream and sugared almond, closing on a balsamic sensation.
- Food pairings
- A fine match with rich fish such as turbot and monkfish, and with fish in sauce. It goes with most pasta dishes, with raw meats and cured meats. Its savour and freshness clean the palate, while the marked structure of Pinot Noir stands up well to full-flavoured dishes.
