- Fermentation
- From early September, strictly by hand into crates and only in the coolest hours of the day, to keep the bunches intact and at the right temperature.
- Vinification
- After gentle pressing, the grapes are vinified separately in steel tanks. The cuvée is assembled in January, and the second fermentation begins in May.
- Ageing on the lees
- Time on the lees starts at 42 months. A further period in bottle after disgorgement lasts about 12 months.

- Storage
- Store in a cool, dark place. Longevity: 8 years.
- Tasting notes
- Yellow with bright golden reflections. The nose opens on fresh orange, then candied fruit and honey, with a lightly balsamic finish. On the palate the perlage is persistent and creamy. The entry is soft and harmonious, the finish dry, mineral and persistent.
- Food pairings
- Although it has real structure, it stays fresh and savoury enough to sip as an aperitivo. Ideal with full-flavoured fish dishes and rich sauces. A pleasing contrast of freshness with vitello tonnato. Suited to roast white meats and pork.
