Fermentation
Early September. The harvest is done entirely by hand into crates, only in the coolest hours of the day.
Vinification
After gentle pressing, the grapes are vinified separately in steel tanks. Only 5% of the Chardonnay is aged in new 225 l barriques. The cuvée is assembled in January, and the second fermentation begins in May.
Ageing on the lees
Time on the lees is 69 months. That long maturation, combined with the choice of a Pas Dosé, lets the wine express the purity and quality of the vintage to the full. A further 12 months in bottle follow disgorgement. It is a path that asks for patience and dedication, and returns a result that brings out every detail of the year.

Storage
The long time on the lees is the result of seeking out particular vintages that express the quality of the year and our way of working to the full. Store in a cool, dark place. Longevity: 8-10 years.
Tasting notes
Golden yellow with a fine, persistent perlage. The nose opens at once on mineral notes with an unexpected and welcome freshness, followed by ripe fruit and citrus. Complex aromas develop with time, recalling sweet spice and pastry. On the palate it is silky and savoury, confirming the nose and striking a fine balance between freshness and structure. It surprises with its length and a persistent aftertaste that amplifies the mineral and fruity sensations.
Food pairings
Perfect as an aperitivo, it goes with fish raw and cooked, shellfish, delicate pasta dishes, raw meats and cured meats. Ideal with blue cheeses and refined dishes such as truffle and foie gras.
